Bean Curry Empty Bean Curry

I made this the other night and it was very yummy. It was like a Mexican sauce. It's from the Thermomix site but the forum won't let me post a link.


1 cm ginger fresh, (optional)
2 cloves garlic
1 onion, peeled and quartered
1 tbsp olive oil
2 tsp curry powder
1 tsp ground cumin
1 tsp turmeric ground
800 g tin red kidney beans, drained and rinsed
400 g tin diced tomatoes
100 g sweet fruit chutney
100 g crunchy peanut butter
60 g tomato paste
250 g water
rice, to serve
Greek yoghurt, to serve

Bean Curry

1. Place ginger (if using) and garlic in thermomix, chop 5 seconds, speed 9.
2. Add onion and chop 5 seconds speed 7. Scrape down the sides of the bowl.
3.Add the oil and cook 3 minutes varoma temperature speed 1.
4. Add the spices and cook 2 minutes, varoma temperature, speed 1.
5. Add the remaining ingredients and cook 20 minutes, 100 degrees, reverse, speed 1.
6. Serve on rice with a dollop of Greek yoghurt
