Basil pesto by Nyree Scott.

50 g fresh basil leaves,

2 cloves garlic,

50g raw cashews,

1/2 cup Parmesan cheese,

1 tbs lemon juice,

1/4 cup oil plus additional tablespoon at end.

I just threw it all into the Bellini and blitzed for 15/20 seconds on speed 6. Tastes amazing and is a fabulous colour too! Am going to stuff chicken breasts with it for dinner tonight. Could use pine nuts or almonds instead of cashews.
