Apple and Blueberry muffins (any fruit could be used)



160g self-raising flour
150g wholemeal flour (or plain white flour)
180g milk
150g raw sugar
2 eggs
70g olive oil
1/2tsp baking powder
100g blueberries

2 apples, cored and chopped into cubes (I pulsed the apples for a few secondsthen put them in aside before adding the flour etc.



I didn't bother washing the bowl between and it worked fine. I left the skin on the apple to.)



1.Place all ingredients, except the fruit, into the bowl and mix for 30 seconds on Speed 4



2.Add apples and mix for a further 10 seconds on speed 3.



3.Carefully mix in blueberries by hand using a spatula(I do the mixing by hand so the blueberries don't just turn to mush)



4.Spoon the batter into a greased muffin tray and bake in a moderate oven for 20- 25 minutes or until golden brown.
