Vegetable & Bacon Soup from recipe booklet

Vegetable & Bacon Soup
Serves 4
This soup is great sprinkled with grated parmesan cheese and served with crusty bread.
1 medium onion, peeled and roughly chopped
2 garlic cloves, peeled
1 tablespoon olive oil
175g rindless shortcut bacon, diced
2 sticks celery, trimmed and cut into 1cm dice
2 carrots, peeled and cut into1cm dice
1 medium potato, peeled and cut into 1cm dice
400g can diced tomatoes
3 cups beef stock
1/3 cup flat-leaf parsley, finely chopped
Salt and ground black pepper
1. Insert Chopping Blade into Bowl. Add onion and garlic. Chop on Speed 5 for 5
seconds. Replace Chopping Blade with Stirring Blade.
2. Scrape down bowl and add oil. Cook on Speed 1 at 100°C for 2 minutes. Add bacon.
Cook on Speed 1 at 100ºC for 2 minutes. Add celery, carrots and potato. Cook on
Speed 1 at 100°C for 3 minutes.
3. Add tomatoes and stock. Cook, with Measuring Cup ON, Speed 1 at 80ºC for 15
minutes. Stir. Cook, with Measuring Cup OFF, on speed 1 at 70°C for 15-20 minutes until
vegetables are tender. Stir in parsley, season with salt and pepper and serve.

Thanks ! Sounds good . Have you ever tried doubling ingredients ? I need a bigger serve
