Mushroom Pate - Katy Hooper

1 onion

2 cloves of garlic

splash of olive oil

30g butter

300g mushrooms

splash of white wine

a few sprigs of thyme

a few sprigs of fresh parsley

400g tin of canellini beans

juice of half a lemon (to taste)



Chop garlic and onion, speed 6, 6 sec

Add oil and butter and saute until soft (about five mins, 100g, sp 1).

Add mushrooms and chop speed 6, 6 sec, scraped sides and saute until soft and liquid from the muchrooms has evaporated (about 7 mins, ST, speed 1).

Add wine, herbs and drained beans and cook for another couple of minutes (100C, speed 1).

Squeeze in lemon juice and blend, starting at speed 3 and increasing slowly to speed 10 for about 30 sec or until smooth. (When blending hot food I put the MC on so that it doesn't splash and proceed with caution).

Refridgerate for a couple hours before serving.
