Slow Cooker Pulled Pork

Post by gemjams on Thu Nov 14, 2013 3:22 pm

This is so easy and one of our favourite easy dinners Smile

Slice 1 - 2 brown onions and scatter in the bottom of your slow cooker. Pop a pork scotch fillet roast on top. Mix a packet of taco seasoning (or equivelent of homemade) and a generous teaspoon of cumin into 1 cup of BBQ sauce (I quite like mixing half a cup with a sweet BBQ with half a cup of a smoky BBQ). Pour it all over the pork then cook it on low for 6 hours. Move the pork aside and mix in a cornflour slurry until the sauce is nice and thick. Cafefully break up the pork into lovely chunks then carefully mix it through the sauce. Serve with hot chips, fresh buttery breadrolls and a nice salad on the side. Fill the rolls with the saucy pork...Soooooo yummy!

Leftovers are awesome on Nachos!
