Chocolate Mud Cake - World's best! Empty Chocolate Mud Cake - World's best!

I converted my very favourite and obviously low-fat chocolate mud cake (the calories fall out when you cut it!) recipe for Bella a while back... Try this and you will never buy another mud cake! This cake tastes best on day two or three, if it lasts that long!

Ingredients:
250g butter, chopped
200g dark chocolate
335g water
440g caster sugar
125g plain flour
125g SR flour
30g cocoa
3 eggs, lightly beaten

Add butter, chocolate, water and sugar to jug and heat to melt 70C, speed 1 for 3 mins
Remove lid and allow mix to cool for about 10 mins.
Sift flours and cocoa and mix speed 4 for 20 sec, scrape bowl and mix for another 5 sec on speed 4.
Add eggs and mix speed 3 for 20 seconds

Bake at 150C in a round greased and lined tin (I've always used a 23cm springform tin which works perfectly) for anywhere from 1.5 to 2 hours depending on your oven, until cooked - keep checking with a skewer.

Allow cake to cool, flip upside down and top with ganache made with 150g dark chocolate and 100ml cream. I then topped mine with maltesers for the perfect chocoholic cake!
